For music, gaming and entertainment they diverge badly, because people search those on YouTube directly rather than on the web.

Because the provider has no data for them, which usually means the volume is too low to measure. A dash is not a zero: a phrase with unmeasurable volume can still be worth targeting if it matches intent precisely.
